When it’s late at night and you’re craving a snack, your favorite food spots may be closed, or you may not feel like leaving home. At times like these, potato chips and other prepackaged snacks may not cut it.

If you’re craving something tasty to eat later in the evening, check out these late night snack recipes. You can use these easy instructions to make something to munch on using ingredients that you probably already have in your home.

Wrecked Omelet

If you have eggs, you can make this simple dish. Whisk up your eggs and add a splash of milk to make them fluffy, then add some salt and pepper. You can include all kinds of ingredients that you have in the fridge. Chop up some onions that you had left over from dinner, toss in some spinach that you usually use to make lunches for work, or put in some of that leftover shredded cheese that’s nearing its expiration date.

Wrecked omelets — scrambled eggs with extra ingredients in them — are an easy and filling dish that makes the perfect midnight snack.

Quesadillas

Do you have a few tortillas leftover from taco night? And some shredded cheese? Then you can make some quesadillas! Get some extra flavor by adding onions, chicken, beef or peppers.

Put some canola or vegetable oil on a paper towel and wipe your skillet. Then add your tortilla and the other ingredients, and fold it over. Let it toast on both sides until the tortilla becomes golden brown with a crunchy texture.

Toasted Sandwiches

Grilled cheese, hot ham and cheese, Reubens — some of our favorite sandwiches have toasted bread. You can make a simple toasted cheese sandwich or even amp up your favorite sandwich.

Put together your favorite sandwich — but first, pop the bread into the toaster! This can take your favorite packed work lunch and turn it into a savory snack to munch on before heading to bed.

Nachos

Tortilla chips? Check. Cheese? Check. Now you’re ready to make some nachos. Take it up a notch with some chicken or beef, jalapenos, bacon or another favorite nacho topping that you have at home.

Pour some tortilla chips onto a lipped baking sheet wrapped with aluminum foil, and cover them with your toppings. Bake them in the oven until the cheese melts and the other ingredients are thoroughly heated. If you’re adding some leftover meat, you may want to pop it into the microwave first to make sure that it heats the entire way through.

Mug Cakes

If you’re craving something sweet, make a mug cake!

Combine your typical cake ingredients — flour, egg, sugar and more — into a mug, and cook it in the microwave. Mug cakes are great because they’re easy to make, are done in minutes, don’t require many dishes to clean and taste great! You can even make a simple icing or top it off with a scoop of ice cream.
